Chef Lo continues to give back to the community that once giving so much to him and his family. During hurricane Irma, which many out of food and clean water, Chef Lo and his company donated their time and service to cook over 1,000 meal to feed the community. Q & A with Chef Lo~ What inspired you to become a chef? Working in the food service industry at a very young age, I was amazed how so many parts have to come together to create an amazing event and food was always the main focus. So I decided to further my education by attending Johnson & Wales University. ~ What are some of your creative influences? Most of my creative influences derive from travel and media. Traveling allows me to understand how and why things are prepared and done the way they are. Media allows me to compare the same dish in many formats. ~ What style of cooking do you enjoy the most? With the study of classical French cuisine and a South East Asian background, I enjoy global cuisine, cooking without boundaries. Understanding classical dishes and infusing them with another regional dish to create unique flavors is fulfilling. A great example is a Chinese Taco or a Ginger Crème Brulee. ~ What is your favorite ingredient? I would have to say fresh herbs. Herbs are very delicate and can change the complexity of a dish if it is not handled properly. I like any ingredient that I can go to my back yard, pick it and use it immediately. ~ What advice would you give someone starting out in the profession? To really think hard and long if this is the path they would like to mature and grow into. This is one of the most demanding and time-consuming businesses, if you want to be successful. We hope everything has gone perfect, but now it's time to let loose! Wedding guests always get excited to see what the bridal party cooked up for their entrance into the wedding reception. A fun thing to do is allow each pair in the bridal party to come up with their own entrance. Some weddings have each pair select their own song to enter the reception and others have one song for the bridal party to come out too. It's completely up to you. Typically, your first dance occurs right after you are announced for the first time and make your entrance into the reception. Take your guests on an emotional roller coaster by making your entrance into the reception a funny one, but then transition into your first dance and start plucking heart strings. Anyways, many of the popular venues will become booked very quickly, so it is important to mark this off your checklist. Now the trouble is, what venue should you go with? There is a lot to think about before deciding on a venue for your special day. After your wedding day has past, the videos and photos that are captured will be the only memory you have left, so you will be thankful for choosing a beautiful venue years down the road. Answer the 6 questions below to help you choose the perfect venue for your Florida wedding.  What style do you vision for the ceremony and celebration?This is a good starting point. You will need to figure out what kind of style you want your wedding to be. Styles can range from southern, country, rustic, traditional, elegant, glam, industrial, and the list goes on and on. The great news is that many venues can incorporate any look that you want, so don't get overwhelmed during the process!  Will you have the celebration indoors or outdoors?Though it seems simple, once you can confidently answer this question, you will be able to narrow down a lot of places. Many venues have the option for an outside area for a ceremony and a covered or enclosed area for the reception. This is a perfect mix to allow you and your guests to have that indoor and outdoor experience.  How many guest do you plan on attending?The number of people that will be attending your wedding, will affect what venues that you are able to select. Most places have a maximum capacity or limit of how many guests you can have on the premises. You would hate to book a smaller venue that will not be able to accommodate everyone you want to be there on the big day, so make sure to consider your guest list when booking your venue. We have plenty of space at the ranch and can accommodate 400 guests!  Have you set your budget yet?This is one of the hardest parts of a wedding, but one of the most important. When picking a venue, try your best to keep the budget in mind. Take into consideration what the venue offers that may save your money on rentals, decor, and much more in the in the long run. For more information on our pricing, click here.  What is your ideal wedding date?Picking a date can be tricky. The time of year you want to get married can affect your venue. If you love summer weddings, you may want to consider a venue with an indoor or covered option in case it rains (even though they say rain is good luck on your wedding day!). If you are dead set on a specific date, make sure before you even look at a venue, that they have this date available. There is no point in falling in love with a venue if they don’t have the available date you want. It is also important to research if the venue is available during certain times of the year or if they have an off-peak season with cheaper options. Due to the Florida heat, we do not currently host any weddings May through August and only offer availability from September through April. Don't forget.Parking is something that no one really thinks about when booking a venue, but it can be a huge deal for your guest's overall experience of your wedding. At White Horse Ranch, we offer valet parking for your guests. This allows them to drive as close as possible to the ceremony and have their vehicle carefully moved to our parking lot in the front of the venue.
If you’re newly engaged, this is for you! Getting engaged is one of the most exciting and memorable times of your life. It can also be a bit overwhelming with the amount of friends and family that will reach out with congratulatory messages and of course, advice. Some of it is really helpful, some of it, not so much. We have heard it all, so we put together a short list of the most common things engaged couples wish they knew NOT to do when they got engaged.  1. Don’t Tell Your Instagram Followers Before Grandma and Grandpa Do your best to tell the ones closest to you, especially family, before you post it the world. The last thing you want to happen is your grandma hear that you’re engaged from the neighbor who saw it on social media. We promise, the Instagram selfie can wait 24 hours! Tell your Grams before the Gram.  2. Don't Feel Pressure to Commit to AnythingAgain, you will (most likely) be receiving A LOT of advice. Your Mom wants you to invite her gym friends. Your future father-in-law wants to keep the wedding very conservative. Oh, and your best friend knows this amazing photographer that you have to use. Try not to decide on a single thing in the first few weeks, or months, of being engaged. As your caught up in the excitement of an engagement, you also may find yourself getting hyped from the well wishes and inviting people along without thinking. Air on the side of caution here and don’t put yourself in a tough spot  3. Don't Choose Your Wedding Party Right AwaySame goes for the bridal party when it comes to not over-committing. Try to keep things vague and avoid making any commitments early on when it comes to your bridesmaids or groomsmen. You still have a lot of things to decide on first that may dictate this, such as the kind of wedding you end up having or your budget. Also, depending on the length of your engagement, friendships can change and evolve. Hold off for a little while before you ask anyone and make sure you are 100%.  4. Don't Wear a Ring That Doesn't Fit YouWe all know that you’re excited to rock your rock, but don’t bypass the fact if it doesn’t fit perfectly. If your engagement ring is too big, it’s especially important that you get it resized immediately before you start wearing it. The last thing you want to happen is that you lose it or damage it. Being that it only takes a day or two to have a ring resized, there’s no excuse to not make sure it stays on your finger forever!  5. Don't Start to Book or Buy a Dress ImmediatelyIt’s normal to start looking around at venues (like us at White Horse Ranch), vendors, and bridal boutiques upon getting engaged, but do not make any commitments, purchases or bookings until you are crystal clear on the details of your special day. You need to do your research and work around specific dates that are available for everyone involved. Not to mention you’ll also want to sit down with your future spouse to come up with a potential budget. If you purchase a dress too early in your engagement, you run the risk of growing tire of it, or see other gowns you would have preferred over the course of your wedding planning.  6. Don't Stress OutThere is a lot of planning, coordinating, and communicating during the wedding planning process. We understand it can be overwhelming. I mean, you’ve only been dreaming of this day for your entire life. No big deal. But in all seriousness, try not to let it stress you out or cause you sleepless nights worrying about it. After all is said and done, it’s just a big celebration with the most special people in your lives. You have the ability to make it as elaborate, or as simple, as you want to. You can always elope, too and throw a party. Regardless, enjoy being engaged and cherish this happy time with your other half!
